Step-by-Step Instructions

Soak rice and dal separately for 6 hours. Add fenugreek to dal.

Grind urad dal first to fluffy batter, then grind rice to slightly coarse paste.

Mix both batters, add salt. Ferment overnight (8-12 hours) until doubled.

Grease idli moulds, pour batter. Steam for 10-12 minutes.

Remove with wet spoon. Serve hot with sambar and coconut chutney.
